Agave nectar is a natural sweetener derived from the agave plant, a succulent native to Mexico. Its clean, delicate sweetness makes it particularly useful in desserts because it enhances other flavors without overpowering them.
Agave is composed primarily of fructose, along with smaller amounts of glucose and other naturally occurring carbohydrates. Because fructose produces a smaller immediate rise in blood glucose than glucose or ordinary table sugar, agave generally has a lower glycemic index than sucrose.
Agave syrup also contains small amounts of naturally occurring plant compounds, including phenolic compounds and other phytochemicals with antioxidant activity. The amounts and composition can vary considerably depending upon the species of agave and how the nectar is produced.
At Enchanted Foods®, agave allows us to achieve just the right degree of sweetness while maintaining the smooth, luxurious texture of our raw desserts. Because it dissolves easily without heating, it is especially well suited to our uncooked recipes and blends beautifully with cacao, nuts, fruits, vanilla, and other whole-food ingredients.
Although agave is derived from a plant and has a lower glycemic response than ordinary sugar, it is still an added sugar and is best enjoyed in moderation. Its high fructose content means that it should not be presented as an unrestricted or therapeutic sweetener.

Cacao is one of nature’s most complex foods, containing hundreds of naturally occurring compounds along with an impressive concentration of minerals and antioxidant-rich polyphenols. It is especially valued for its flavanols, plant compounds that have been extensively studied for their potential role in supporting cardiovascular and metabolic health.
Cacao is naturally rich in magnesium, an essential mineral involved in hundreds of processes throughout the body, including normal muscle and nerve function, energy production, bone health, and regulation of blood pressure. It also provides iron, copper, manganese, phosphorus, potassium, zinc, and fiber.
Perhaps cacao’s most celebrated nutritional compounds are its flavanols, particularly epicatechin. Coconut oil is a naturally occurring plant fat prized for its smooth texture, delicate flavor, and unusual fatty acid composition. Unlike most plant oils, coconut oil is predominantly saturated fat, with lauric acid accounting for a substantial portion of its fatty acids. It also contains smaller amounts of caprylic and capric acids.
Lauric acid is converted in the body in part to monolaurin, a compound that has demonstrated antimicrobial activity in laboratory research. Coconut-derived fatty acids and their derivatives have been studied for their activity against certain bacteria, fungi, and other microorganisms. These findings are intriguing, although they should not be interpreted to mean that eating coconut oil can prevent or treat infections.
Coconut oil is also readily used by the body as a source of energy. Some of its fatty acids are metabolized differently from the long-chain fatty acids found in many other dietary fats. Stevia is a naturally derived sweetener originating from the leaves of Stevia rebaudiana, a plant native to South America. Its sweetness comes from compounds called steviol glycosides, which can be hundreds of times sweeter than ordinary table sugar. Because such a small amount is needed to provide sweetness, stevia contributes virtually no calories or carbohydrates.
One of stevia’s greatest advantages is its ability to provide sweetness without the rise in blood glucose associated with sugar. This makes it particularly useful when reducing the amount of sugar and total carbohydrate in foods.
